Vichyssoie soup with white Selsey crab creme fraiche and trffle oil ( hot or cold)

Goats cheese beignets with pickled walnuts and poached pear , cranberry dressing

Marinated crayfish and smoked salmon with cucumber and rocket salad , citrus dressing

Chicken liver parfait with spiced plum puree and toasted brioche

Mains

Sauteed pork cutlet with a honey and mustard crust , champ potato ,braised carrots and a tarragon sauce

Grilled whole plaice with new potatoes , parsley and lemon butter , pea puree

Pan fried calves liver with crispy pancetta ,caramalised onions , gratin mash and red wine  sauce

Dessert

Gratin of fresh summer fruits witha Kirsch sabyaon and melon sorbet

Dark chocolate mousse , orange gel , caramalised youghurt and shortbread biscuit

Warm lemon sponge with lemon curd cream cheese and straberry sorbet
